Autumn Rain

This past week has given us PERFECT autumn weather in Boston, that is until it didn’t.  Our 10 week old labrador puppy, Copley, has been rolling in the leaves and trotting down the crisp streets of Charlestown without a care in the world.  Until last night.  Enter torrential rain.  Apparently our pup does not like the cold drops of water coming from the sky.  Even while holding an umbrella over the little prince, he still is not having it.  This will change tonight.  Because I can’t handle another accident.  So we will walk outside…and he will learn to love the rain.  GOALS.

In other autumn news, I received my first jars of Nikki’s Coconut Butter this past weekend.  I have been reading great things about it for years, but never took the plunge.  When I saw that they were offering Pumpkin Spiced Donut as a flavor I was sold.  I ordered a jar of it along with a jar of the Vanilla Cake Batter.  My husband and I both eat a low carb diet, so this is the perfect sweet snack with under 10 carbs per serving.

We had guests coming over to see our new condo/meet Copley on Saturday night, so I whipped up a batch of Pumpkin Cookie Dough Balls using the Pumpkin Spiced Donut flavor.  They were a hit.  Perfect pumpkin spice flavor without overdoing it.  Also, the longer they stayed in the fridge the better they got.  By day 3, they were unreal and also GONE.

This week I’m going to whip up a batch of Pumpkin Spice Fudge Bites. So more to come on my journey with Nikki’s Coconut Butter.  But so far it’s been epic.

Feeling Green

I over did it this week when I bought my fruits and veggies.  Way too many, and I don’t like to waste them.  Looking through my fridge last night I noticed that my asparagus and avocado were probably not going to make it too much longer. I decided to make a greek yogurt avocado parmesan sauce with asparagus.  Since I was really craving pasta I put it on top of some whole wheat whole grain spinach spaghetti. It was very GREEN.  But it was equally awesome!

To make the avocado sauce I mashed about a 1/4 of a large avocado with enough greek yogurt to make it creamy.  I then added some garlic powder, black pepper, hot sauce, and parmesan.  I boiled chopped asparagus for about 5 minutes and spooned it directly into the sauce to warm it up.  I then boiled the spaghetti in the water I used for the asparagus.  Once done, I strained my pasta, plated it, and poured the sauce over the top.  I gave it a little black pepper and a few shakes of parm…amaze!


Quesadilla Love

I was really loving Mexican yesterday! After eating my Fiesta Salad for lunch, I ended up making a tomato and cheese quesadilla for dinner.  I used a La Tortilla Factory mini Fiesta flavored wrap as my base.  These things are AWESOME!  I filled it with a sliced Kumato tomato and a Garlic and Herb Laughing Cow wedge.  I cooked it on a hot grill pan for about a minute on each side until the tortilla started to brown.  On the side I steamed some broccoli and cauliflower.  I wanted some spice so I mixed some greek yogurt with Frank’s Red Hot Buffalo sauce and used it for dipping :)

Tomato Quesadilla


Clearly I was not done with quesadillas yet, because for lunch today I had another!  This time I used sliced mushrooms in place of the tomato.  I sautéed them in a pan with some olive oil spray and black pepper.  All other ingredients remained the same :)

Fiesta Salad!

Lunch today was quick and easy. I threw the following veggies/fruit in a bowl:

Spring Lettuce Mix
Red Pepper
Green Onion
Black Beans

Party in a bowl! The mango is the best part.  Until I moved to Florida I don’t think I ever really even tried a Mango, now they’re my fav! They’re cheap too, a dollar a piece at Fresh Market.

Fiesta Salad


For the dressing I mixed equal parts Newman’s Own Peach Salsa and Fage 0% Greek yogurt.  To give it some extra spice I added a little Green Tabasco.

Grape and Jelly Breakfast

This morning I started my day with my usual half bottle of Synergy Kombucha Tea.  Usually I stick to the Gingerberry, the Cranberry, or the Trilogy flavor, but today I tried Grape.  Personally I think the Grape is the best tasting one out there.  I was able to find it at my local Earth Origins Market.  If you haven’t tried it yet, it’s definitely worth giving it a shot!

After polishing off my Synergy I was pretty hungry.  I knew I wanted an egg sandwich, but I wasn’t in the mood for vegetables.  I wanted something sweet and savory.  I decided to throw together a fried egg with a wedge of laughing cow cheese and some Strawberry Preserves.  I sandwiched these ingredients with an Ezekiel Sprouted Whole Grain English Muffin.  I know this combo may sound weird…maybe even gross to some, but I thought the different layers of flavor were amazing.  It was also very filling and should keep me going all morning!

Post Workout Chocolate PB & J Smoothie

My absolute favorite post work out fuel is a Chocolate Peanut Butter and Jelly Protein Smoothie.  To make it I place the following ingredients in my single serve MyBlend Oster blender:

1.5 cups Unsweetened Vanilla Almond Milk
1 scoop Gold Standard 100% Whey in Extreme Milk Chocolate
1-2 Tbs Peanut Butter & Co. Dark Chocolate Dreams
.5 cup frozen berries (any kind)

Blend until smooth. Love.

Crunchy Vegetable Egg White Burrito

This morning’s breakfast was easy and super healthy!  Warm up a few handfuls of whatever crunchy vegetables you have on hand in a pan with some olive oil spray.  Drop 2 egg whites over the veggies. Cook for a minute or two and flip.  Place in warmed tortilla of your choice (I use !Tam-x-ico’s! Low Carb Wheat Tortillas).  Add a wedge of Laughing Cow Cheese and hot sauce. Wrap it up and eat.  Amaze.

Overnight Oats

A lot of people have asked me recently how I make my overnight oats.  There are a million recipes out there and I have combined a lot of them to make my own version.  This is perfect for breakfast, lunch, or dinner.  Especially when it’s this hot out!  It is also a great bring to work lunch option that’s both healthy and filling.

Hermove’s Overnight Oats


1/2 cup rolled oats
1/2 cup 0% Fage Greek yogurt
1/2 cup unsweetened Vanilla Almond Milk
1 teaspoon cinnamon
1 teaspoon ground chia seeds
1/2 banana sliced
2 large strawberries sliced
1 tablespoon Peanut Butter & Co. Dark Chocolate Dreams


Combine oats, almond milk, and yogurt in a 2 cup container that has a lid.  Add cinnamon and chia seeds and mix well.  Close container and store in fridge for one hour minimum, but for best results overnight.  Remove from fridge and top with banana, strawberries and peanut butter.  Dig in!

Sweet Peach Potato

It’s been a while, life got in the way :)  I want to share a quick, easy, and very healthy lunch option.  This is perfect for bringing to work and so filling.

Sweet Peach Potato


1 Sweet Potato
2 Laughing Cow Light Swiss wedges
2-4 Tablespoons Peach Salsa


Wash sweet potato and puncture several time with fork.  Do not remove skin…it’s the best part!  Place potato on plate or in tupperware and microwave for 4 minutes.  This may take more or less time depending on the size of your potato and the microwave.  You’ll know it’s done cooking when you can easily run a knife through the center.  Remove from microwave and let cool for a few minutes.  Use a fork and knife to pull the potato apart and mash a bit.  Top with two Laughing Cow wedges and 2-4 tablespoons of Peach Salsa.  Enjoy!
