I’ve really been into eating seasonal foods lately.  Squash is huge during autumn in New England.  Tonight I made one of my favorite squash recipes: Acorn Squash with Brown Sugar, Butter, Cinnamon and Nutmeg.  Healthy comfort food that is ready in less than 5 minutes.

Directions:

Cut a medium sized Acorn Squash in half and remove pulp and seeds.  Place one half of squash cut side up in a bowl. Microwave for 3 minutes on High. Remove from microwave and add one tablespoon of butter and 1 teaspoon of brown sugar into squash opening.  Sprinkle with cinnamon and a tiny dash of nutmeg.  Microwave for 1 minute, stir butter mixture and use it to coat the dry parts of the squash. Let cool…it will be HOT!  Enjoy 🙂
